Latium is located in the central western part of Italy on the coast of the Tyrrhenian Sea. It includes the Apennines mountains, fertile foothills and valleys. There are four groups of ancient volcanoes, each with crater lakes. This area was once the center of the world, and remains an international center of art, politics, religion, and trade. Its population is 5.2 million, making it the third most populous region of Italy.</p>
<p>Latium, also called Lazio, was settled by Indo-European tribes during the 2nd millennium B. C. Later it became Etruscran. When the Etruscans were driven out by the Romans, the area became impoverished and remained so for centuries. </p>
<p>Food abounds, you name it and it’s probably grown in the region. The region’s most special vegetable is the artichoke. It may surprise you to learn that Latium is a center of kiwi production. It is also known for seafood, fish, and shark. Meat raised here includes beef, lamb, pork, and veal. The regions most famous cheese is Mozzarella di Bufala Campana, Mozzarella made from the milk of water buffalo. According to the popular local legend, Julius Caesar sent Marc Anthony to Egypt, where he fell in love with Cleopatra and this cheese. He sent water buffalo back home and local residents have been enjoying this Mozzarella ever since. Whether or not this legend is true, Mozzarella di Bufala Campana cheese has been popular for centuries. Latium once produced Falernian, which was considered the best wine in the Classical World.</p>
<p>Latium’s major city is Rome, the capital of Italy. As the Italian writer Silvio Negro said, “Roma, non basta una vita,” Rome, a lifetime is not enough. Ancient Rome was a center of wine production and of amprhorae, clay wine jugs. The area still produces wine. A short Internet search revealed an 18th Century villa for rent 35 minutes from the heart of Rome, surrounded by 30 acres of vineyards and olive groves. </p>
<p>Latium devotes three hundred thousand acres to grapevines, it ranks 7th among the 20 Italian regions. Its total annual wine production is about 78 million gallons, also giving it a 7th place. About 16% of the wine production is red or rosé, leaving 84% for white. The region produces 25 DOC wines. DOC stands for Denominazione di Origine Controllata, which may be translated as Denomination of Controlled Origin, presumably a high-quality wine. Only 6.5% of Latium wine carries the DOC designation. Latium is home to three dozen major and secondary grape varieties, half white and half red. </p>
<p>Widely grown international white grape varieties include Malvasia, Chardonnay, Trebbiano, and. Sauvignon Blanc. The best known strictly Italian white varieties are subvarieties of Trebbiano, the yellow Trebbiano Giallo, the green Trebbiano Verde, and Trebbiano Toscano. </p>
<p>Widely grown international red grape varieties include Cabernet Franc, Cabernet Sauvignon. and Merlot. The best known strictly Italian red variety is Cesane. Also popular is Sangiovese, an Italian grape now found elsewhere including in California. </p>
<p>Before we reviewing the Latium wine and cheese that we were lucky enough to purchase at a local wine store and a local Italian food store, here are a few suggestions of what to eat with indigenous wines when touring this beautiful region. <br />
Start with Spaghetti alla Carbonara, Spaghetti with Cream, Pancetta (Italian bacon), and Egg. <br />
Then try Luccio Brodettato alla Romana, Pike in an Egg-Lemon Sauce. <br />
For dessert indulge yourself with Pizza di Polenta e Ricotta, not a pizza, but Sweet Polenta Ricotta Cake.</p>

Tenuta Gasperini’ Vigneti VillaFranca ‘Castelli Romani Rosso DOC 2002 13.5% alcohol about $13</p>
<p>This wine was produced about 20 kilometers south of Rome. It is a 50/50 blend of Sangiovese and Montepulciano, two popular Italian red varieties. I found it a bit acidic and relatively tasteless at first. I tried it with kube also called kibbe, a Middle-Eastern specialty, balls of ground rice filled with ground meat.  They were cooked overnight with potatoes in a somewhat spicy tomato sauce. The wine tasted a bit of cherries and tobacco.  In a meal of chicken burgers and zucchini in a bland tomato and onion sauce, the tobacco taste was stronger than previously. The marketing materials for this wine mentioned raspberry, plum jam, leather, sweet spice, and tomato leaf. When looking for them I found plum jam and leather, but not the other elements. The distributor recommends this wine with baked pasta or veal medallions in a red wine sauce. Maybe. </p>
<p>Pecorino Toscano is a sheep’s milk cheese made in Tuscany and neighboring Umbria for thousands of years. It is also produced in Latium. Soft Pecorino Toscano is white with a tinge of yellow, while semi-hard Pecorino Toscano is pale yellow. This cheese is moderately strong smelling and has a complex nutty flavor. I tried this wine with sliced soft Pecorino Toscano on toast with a somewhat spicy Moroccan tomato and pimento based dip. The flavors blended well, and the wine wasn’t thin. However, in the final analysis I would not buy this wine again. It seems overpriced and cannot compete with many other wines that I have tasted in this series.

Lots of people, and perhaps you&#8217;re one of them, love rosé champagne but sometimes they ask themselves why it&#8217;s always a few dollars or pounds more pricey than normal, white champagne. You could be forgiven for thinking that it&#8217;s all a marketing ploy just to get you to part with more money.</p>
<p>Well, in fact, if we discard all the conspiracy theories there is a good explanation why rosé costs that little bit extra and here&#8217;s why&#8230;</p>
<p>Leaving aside the colour and the taste there&#8217;s something else that&#8217;s different about rosé champagne and that&#8217;s the way it&#8217;s made.</p>
<p>There are two ways to make rosé champagne but by far the most common is simply to take still red wine and mix in a small quantity, roughly 10%,  to still white wine to make a pink blend from the two.</p>
<p>Then the blend carries on through the usual champagne making process which creates the fizz and transforms the still wine into champagne.</p>
<p>They&#8217;re not allowed to make rosé this way anywhere in France except in Champagne.</p>
<p>At first sight it seems so simple and cheap doesn&#8217;t it, but as is often the case, it&#8217;s more complex than it looks.</p>
<p>For starters the red wine must be made in Champagne, from grapes grown in Champagne.</p>
<p>That seems straightforward and you wouldn&#8217;t think that finding red wine in Champagne would be a problem.</p>
<p>There&#8217;s been a history of wine making in Champagne going back centuries. Long before Champagne gained a reputation for its sparkling wine, still red and white wines from Champagne villages such as Bouzy, Dizy and Aÿ, were despatched by road and/or river to the royal courts near Paris and enjoyed by the French nobility. Strange though it may seem now, back in the 1500s still wine from Champagne was more in demand than Burgundy.</p>
<p>These wines go by the appellation &#8216;Coteaux Champenois&#8217; to distinguish them from champagne and they&#8217;re still made today, if you can find them&#8230; and that&#8217;s a good way to move on to the next point</p>
<p>In theory there should be no problem obtaining red wine in champagne, but despite there being umpteen millions of black grapes picked in Champagne every year, almost none of them are made into red wine</p>
<p>It&#8217;s not hard to understand why:</p>
<p>It takes time, effort and patience to make red wine, so the final product is costly.</p>
<p>With the Champagne region being so far north, red wine made here is never absolutely; it&#8217;s nothing that&#8217;s ever going to rival the great red wine made elsewhere in France.</p>
<p>The high price coupled with the middling quality means that Coteaux Champenois is not the easiest wine to sell, so why make it in the first place?</p>
<p>Last and certainly not least, it makes more commercial sense, to press the grapes to make regular white champagne which commands even higher prices than the wine makers can get for still wine.<br />
What this means for you as a lover of rosé champagne is that it&#8217;s always going to be more expensive than the equivalent white champagne because of the limited supply and cost of the red wine.</p>
<p>If rosé champagne wasn&#8217;t the price it is, no one would bother making red wine &#8211; the essential ingredient &#8211;  in the first place.</p>
<p>So next time you&#8217;re enjoying a lovely glass of rosé champagne, relax, you&#8217;re not being taken for a ride. It really is expensive.

Red wine online has gone from strength to strength and during the winter months drinkers move into red wine from white wine and rose wine. Merlot this autumn has raced into the number one grape on our website. The reasons for this are very varied but also fascinating as it represents consumer&#8217;s change of habits.</p>
<p>Merlot is undeniably soft, mild, easy to drink, but bursting with all the values a good red wine grape delivers. It is this that catapulted the grape to King of grapes in the US when in 1991 TV shows were extolling the benefits of red wine to the American consumer.  It has become the Budweiser of the red wine industry in the USA.</p>
<p>Merlot was always the ugly sister of Bordeaux next to Cabernet Sauvignon until in the 1980&#8242;s the US wine critics thought of this easy drinking red wine with a Bordeaux reputation. During the 1980&#8242;s and 90&#8242;s many New World vineyards invested in the grape and the Merlot lake was born.</p>
<p>The Marketing and PR people then span the Merlot tale and even the Australian wine producers bought the spin, as Merlot was a proven success. Merlot is in strong growth both among New and Old world wines. Even in Bordeaux the grape constitutes 56% of plantings, but in Pomerol it is 80%. In Bordeaux Merlot is blended with great grapes because of it&#8217;s capabilities. </p>
<p>Italian <a href="http://www.thepurveyor.com"> red wine </a> vineyards now plant the grape as the fifth most popular with the best wines coming from Tuscany, Umbria and Friuli.</p>
<p>California red wine producers have been very busy planting the grape and they are now the fourth largest world producer behind Bordeaux, Italy and Languedoc.</p>
<p>South Africa, Australia, Argentina and Chile have all  been busy growing and marketing the grape but many of the Chilean Merlots are not virgin Merlots but field blends of Merlot and Carmenere.</p>
<p>Wine consumers the world over have begun to trust the grape as a trusted friend, easy to drink and good with food. The Merlot can deliver at its best a very smooth rounded red wine bursting with a velvety tannin and multiple berry flavours. There can be a spice or cinnamon tastes with hints of licorice, and truffles.</p>
<p>Merlot has also broken into the with food occasion both in the on trade and at home as it goes well with meat dishes, spiced dishes and good old English pub food. It has become a good comfort food red wine. </p>
<p>Four years the online wine retailers embraced the grape and have promoted it ever since. It is only really the Shiraz and Cabernet Sauvignon that have beaten Merlot into third position, but that is another story.  We have witnessed good growth coming from several  brands. The first is the Torres Atrium Merlot Penedes. This wine is made 100% from Merlot and is sourced from vineyards which form part of the Agulladol Estate. Matured for 6 months in French oak this fine Spanish red wine is deep coloured, with soft juicy plum and blueberry fruit flavours and typically soft, rounded tannins.  The second is the Drylands Merlot, Marlborough which undergoes 10 months ageing in a mixture of new and seasoned French and American oak barrels. Shows soft, ripe flavours of black plums, berry fruits and spice with a firm structure, and complex finish. The last Merlot that has been in great growth is Errazuriz 1870 Teno Block Merlot, Curico Valley which is a red wine with a juicy plum fruit character which shows hints of oak and smooth tannins on the finish.</p>
<p>Merlot wines have done very well in the last thirty years, producing easy drinking red wineswith strong Bordeaux provenance, easy blending characteristics have offered product versatility and its fit with food have extended the occasions it can be drunk. Long may its success continue for the online retailer.

If you haven&#8217;t got one, though, don&#8217;t worry: you still can keep wine in your house! If you can, it would be better to store it in a room in which you can avoid switching on the heating, and which it&#8217;s possible to keep dark and silent.<br />
Normally, white wines need to be served fresh; prosecco and sparkling wine in general should be served at a temperature of 8°C, though they should not be kept in the fridge for a long time, because their structural characteristics would change.<br />
Of course, there are so many kinds of wine that it is impossible to establish a general rule for all of them: these indications are generalized and referred to the most common wines. Some more rare wines can have different characteristics: some sparkling wines, for example, should be served at slightly higher temperatures, like the prosecco millesimato (vintage sparkling wine), that, to allow their particular aromas to develop completely, are served at 12°C.<br />
Hence, you need to know the specific characteristics of every bottle of wine to guess the temperature which better brings out its characteristics: to begin with, you can pay attention to the suggestions given in the label and, mostly for aged red wines, open them some hours before serving so that they can oxygenate and bring out their taste.
